A little known fact about me is that I love to bake, and especially during the holiday season. I am a southern girl and love all things pecans!! My aunt Betty introduced me to this recipe called Pecan Tarts. I would get so excited every holiday season, because she would bake me a batch of these delicious Pecan Tarts! I have adapted it to be gluten free, but it can be baked using all purpose flour as well.
My aunt Betty passed away in October of 2018. I am so grateful for fond memories, and we shared a lot! She loved trying new recipes and she also enjoyed cooking for her family. Every time I bake these Pecan Tarts, I think of her. I love how recipes keep us connected to our ancestors. So here’s the recipe….

Aunt Betty's Pecan Tart Recipe:
Crust:
— 3 oz. cream cheese, softened
— 1 stick of butter, softened
— 1 cup gluten-free all purpose flour
Mix all ingredients together, shape into balls and press in a greased mini muffin baking pan.
Filling:
— 2 eggs
— ¾ cup brown sugar, (preferably organic)
— 2 TBSP butter, melted
— ¾ cup chopped pecans
Mix all ingredients together thoroughly. Pour one tsp of filling into each mini muffin shell. Bake at 350 degrees for 25 minutes.
Yields: 2 ½ dozen
