Spring Detox Salad with Lemon Herb Dressing

🥗 Ingredients


For the salad:

• 4 cups mixed greens (arugula, spinach, or spring mix)

• 1 cup cucumber, sliced

• 1 cup strawberries, sliced

• ½ cup shredded carrots

• ½ avocado, diced

• ¼ cup raw walnuts or pecans

• Optional: grilled chicken or chickpeas for protein


For the dressing:

• 3 tbsp extra virgin olive oil

• 2 tbsp fresh lemon juice

• 1 tsp raw honey (optional)

• 1 tsp Dijon mustard

• 1 clove garlic, minced

• Pinch of sea salt & black pepper




🍋Instructions:

1. In a large bowl, combine all salad ingredients.

2. In a small jar or bowl, whisk together dressing ingredients until well blended.

3. Drizzle dressing over the salad just before serving.

4. Toss gently and enjoy fresh!
